Easy & Light Tuna Salad Wraps

Despite my bosses being back and shipments coming in, I did surprisingly little today. I feel bad about this because I end up spending so much time reading blogs and looking for Christmas gifts, but I ask what I can do to help and they say nothing!! Our big meetings start tomorrow. One of my goals is to start seeking out work outside my department. Being proactive is a good way to learn about other areas and make your name known. But blog reading is sooooo much easier….

Last night at Trader Joe’s I bought some new-to-me items that I’m excited to try!

 

TJ's Sprouted 7-Grain Bread, TJ's Personal Pizza, TJ's Creamy Salted Almond Butter, Peanut Flour, Candy Cane Green Tea

 

I’ve had the almond butter, but not salted. I’m super excited to start baking with the Peanut Flour, and I tried the sprouted 7-grain bread today at lunch! I don’t know if it’s quite as good as the Ezekiel brand I’d been using, but it’s a whole lot cheaper.

On the new bread I had a Dr. Praeger’s burger with hummus, spinach, and a slice of tomato. I had some raw string beans on the side and a clementine. A couple hours later I had a honey crisp, followed by my normal snack of pumpkin oatmeal with blueberries and Kashi Go Lean.

WORKOUT:

Marathon Training officially starts today!! And that meant that even though I was exhausted I had to get myself on the treadmill. Training for races is a major source of motivation for me! I ran 3 miles on the treadmill (which can feel so hard sometimes!), walked for a 1/2 mile, and then read the rest of my Shape Magazine on the elliptical for 20 minutes. Followed by a whole slew of ab exercises and then I was out the door.

 

DINNER:

Tuna salad was on my brain tonight, and I had just bought some pre-made veggie mix at Trader Joe’s last night that removed all the chopping prep work!

First I drained the can of tuna and broke it up with a fork.

Next I added a couple handfuls of the veggie mix (it had celery, carrot, radish, onion, etc), a spoonful of Nayonaise, about the same about of spicy mustard, as well as some garlic powder, seasoned salt, and paprika. I just went through our spice drawer and picked out what smelled good 🙂 That’s usually how it works for me!

I made two wraps out of this mixture – one for tonight and one for lunch tomorrow. I placed a scoop of the Tuna Salad on a wrap with some spinach and grilled them on our George Foreman.

What wouldn’t fit in the wraps was just eaten on the side! This tuna salad is very light and mostly veggies, with just enough creamy coating to get a nice flavor in each bite. (BTW, every time I type flavor I spell it the European way with a u.) I think I am going to have a grapefruit and some of that new Candy Cane tea for dessert now!

 

I’m nervous about the 5 miler my training plan calls for tomorrow morning. I’ve never run that far before work, nevertheless on a treadmill! My body sometimes can’t go that far that early, but hopefully I can pull through!

HAPPY SAINT NICK’S DAY!!

  • Did you celebrate St. Nick’s Day today?? We used to always put our shoes out when we were younger, and I was kind of surprised that my parents didn’t leave me anything since I’m at home again! Some of my friends would get huge gifts like clothes and DVDs, while in my family it was usually little ornament and some candy.

    I didn’t know it was Saint Nick’s day today, but when I was little my parents always made us leave out our shoes at night and we would collect our little treats (candy and money) in the morning! You tuna salad looks great! I make mine with lots of vegetables as well, I like the crunch!

    You will not be disappointed with your Peanut Flour! It is so great for making sauces and baking…and most of all…to add to your oatmeal! I think St. Nick forgot about me this year 😦 We used to hang out stocking on the fireplace as children and in the morning it would be filled with goodies!

    Yumm I love tuna salad. I hate mayo (and I’m not familiar with Nayo), so I always make mine with hummus instead. It’s really tasty and by using different flavors of hummus you can add different kicks.

    I just bought that salted creamy almond butter, it’s delicious! Please tell us how it is to cook with the peanut flour; I see it on blogs all over and am not really sure what to do with it! 🙂
    YUM that tuna looks delicious!!! I know what I’m having for dinner…grilling it sounds amazing!

    i have been wanting to buy peanut flour for MONTHS… i have just been way to lazy to do the drive to trader joes… i think i need to just do it and make myself happy haha 🙂

      I’d thought about it for a while too –I wrote a post a while back called “On Peanut Flour and Recovery” debating whether it was good for me to buy it since eating REAL peanut butter was such a huge step for me! But I decided I probably wont use it as a PB replacement very much. Now I just gotta figure out what to make!!
