I LOVE BREAKFAST COOKIES

So I’ve decided the real purpose of a taper isn’t to rest your body, but to give you so much pent-up energy that you want to go bust out a marathon just to feel yourself MOVE! Last night I was daydreaming about kickboxing classes, body pump, spinning, anything. Unfortunately this morning I had to settle for another 10 minute Pilates for flexibility video. I’ll get plenty of exercise in a few days:)

I didn’t have quite as much time on my hands this morning because I had to shower (I know. How inconvenient.) and also pick up my brother from Dobbs where he was dropping off his car to get serviced. But I did get to sleep in a bit and enjoy a morning at home.

OUTFIT:

Top: H&M, Sweater: Target, Jeans: Gap, Shoes: Bakers

And I got to wear my ring that finally got fixed!! One of the little bow prongs fell off and the jewelry repaired it for me. I ❤ this ring.

So then I had to wait at Dobbs for my brother. He was running a bit late after a night at the casino with a friend that’s in town. And I was nervous about getting to work on time! Actually I think I just really wanted to eat my fancy schmancy breakfast asap.

About that breakfast…

BREAKFAST:

A fitnessista breakfast cookie! Last night I combined 1/3 cup rolled oats, 1 big spoonful of almond butter, and 1T vanilla protein powder in a bowl. I mashed it all up with my spoon until the almond butter was incorporated. Then I added 2T soy milk and 1/2 a ripe banana and mixed it all together. Into the fridge to harden overnight.

This morning I topped my cookie with the other half of the banana and peanut flour sauce made with 1T peanut flour, a wee bit of stevia, and water to desired consistency.

ooooh yeahhh…

THIS WAS INCREDIBLE. I dug in immediately when I sat down at my desk and never wanted it to end. I think I may have found a new favorite breakfast. For realz try this….the “cookie” gets moist and doughy like an undercooked brownie and the peanut flour sauce just took it to a whole other level.

Can I have this breakfast for lunch and dinner too? I would seriously consider it if I didn’t already have plans for those meals. MMMM MMM MMMM! Okay I’ll stop. Just promise me you’ll try it!

    Haha.. Taper is all about creating pent-up energy and eating as much food as possible!!!I love those banana breakfast creations you make… Awesome outfit! Enjoy your time you get to chillax!!! You have worked hard up to this point, you deserve it!

    I totally forgot about breakfast cookies!! I used to have them like 2 times a week!! Need them back in my life! 😉

    Isn’t taper hilarious in that way? It’s always rough for me trying to NOT prance around everywhere being giddy and excited with all that energy. Glad you’re able to resist the temptation to get your body movin’! Your legs will appreciate it during the race. What have you decided to wear for race day?

    Omggggggggggggggggg I am obsessed with that ring. Anything with bows, frills, ruffles, or any other ridiculously girly detail just kind of calls to me.
